Quick post about a miraculous idea I had.
New PBnJ plus another B.
Wrap (whole wheat please!) - banana - cut up strawberries - 1 tbs peanutputter
Put those yummies on the tortilla and mush em up to your liking then wrap it up and enjoy!
Add cereal for some crunch :)
This blog was an outlet during my recovery from my eating disorder through and has since transformed into an outlet for my journey through life. I'm honest, sarcastic, and don't reread my posts. What you read is what you get and I hope that some of that is relief.

Bababombomb Chicken
So the title of this post isn't really a word (ba-ba-bombomb). Just fyi.
My aunt (from TAMPA) and my mom came and visited on Thursday ... which is why I was not present in class ... I know you noticed ... anyway. I chose to make them dinner. Over the past couple of recipes I was introduced to canned tomatoes ... I wanted to use them again. So I found this recipe and made it my own.

Serves 4
Ingredients:
- 4 tablespoon olive oil
- as much or as little chopped garlic as you'd like
- 1 3/4 cups of canned tomatoes (MAKE SURE YOU DRAIN THEM!)
- 2 teaspoons of nutmeg
- shake some basil in there
- 6 teaspoons honey
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 4 small zucchini, quartered lengthwise and thinly sliced crosswise (about 4 cup)
- Coarse salt and ground pepper
Directions:
- In a large skillet, heat oil over medium-low heat. Add garlic; cook until it starts to soften, about 1 minute.
- Stir in tomatoes, nutmeg, basil, teaspoon salt, 1/4 teaspoon pepper
- Bring to a boil and reduce to a simmer. Cook, stirring occasionally, until most of the liquid has evaporated but is still somewhat saucy, 6 to 8 minutes.
- Stir in honey; add chicken and zucchini. Return to a simmer and cover. Cook, turning once, until chicken is cooked through and zucchini is tender, about 10 minutes.
- Serve over couscous, with potatoes ( I used instant haha) or rice!
